Does conditioner dry out hair, or only shampoo?

I have very dry hair as I get older. I used to wash and condition my hair every day. But now I'm trying to shampoo only 2 - 3 times per week, just to not dry out my hair so much. I'm still using conditioner every day, is that a good idea? Any other suggestions on avoiding dry hair? I use Aveeno moisturizing shampoo and conditioner.
